kcalIn western countries, cottage cheese is available in one or two forms and unfortunately, just popular among the health-conscious people and athletes. In most Eastern European countries chocolate-dipped cottage cheese threats are common. The main ingredient in this Chocolate Frosting with Cream Cheese Cake is of course the “Cottage Cheese”. If your cottage cheese is too moist than you must drain it, otherwise it will make the base of cake wet, which is not desirable.
Ingredients
- Base:
Eggs: 3 medium-sized
Flour: 1/2 cup, 60g
Cocoa powder: 1 tablespoon (unsweetened)
Baking powder: 1/2 tablespoon
Agave syrup: 2 tablespoons (or any sweetener of your choice)
- Filling:
Gelatin: 1/4 cup, 50ml
Lemon zest: 1
Cottage cheese: 14 oz/ 400g
Whipping cream: 200ml
Honey or sweetener: 2 tablespoon
Vanilla extract: 2 tablespoon
- Frosting:
Chocolate: 4 oz/ 120g
Butter: 2 tablespoon/ 30g
Directions
- Step 1: Bake the base of cottage cheese chocolate cake
Preheat the oven to 180ºC. Take a round baking tray, cover it with butter and flour or you can also line this baking tray with baking sheets.
Break the eggs carefully and separate the egg whites from the egg yolks. Beat the egg whites on high speed with an egg beater in a separate bowl. Continuously beat the egg whites until hard peaks form. Peaks should be stiff.
Now start adding egg yolks in the egg white mixture, also add sweetener of your choice. Take measured flour in a bowl, and then add unsweetened cocoa powder, and baking powder in it and mix all these dry ingredients.
Gradually add this dry mixture into the eggs and stir well to combine all the components. When the batter is ready, evenly spread this mixture into the baking tray and bake it in the oven that is already preheated at 350ºF/ 180ºC for 25 minutes.
When baking is done, take it out from the oven and place it in the fridge to cool down. - Step 2: Prepare the cheese filling
Take 50ml hot water and dissolve gelatin in it. Continuously stir to dissolve it completely. Allow it to cool down at room temperature because it will set at 15ºC.
In a mixing bowl combine cottage cheese, vanilla extract, lemon zest, and honey. When these ingredients are evenly mixed then add cooled gelatin into this cottage cheese mixture.
Put the whipped cream into the cottage cheese carefully. It is better to cut the top of the cake to make a smooth and flat surface. Put the cake base back into the cake tin. Spread the cottage cheese on the top of the cake base and place this cottage cheesecake in the fridge for 2-3 hours. - Step 3: Make frosting
To prepare the frosting of this cottage cheese chocolate cake, melt chocolate along with butter. Evenly spread this melted chocolate over the top of the cake.
