Brisket, short plate, and flank are the tough cuts of beef and also very lean and fibrous. They should be grounded finely with some additional fat to make good sausage meat. Hamburger is a grounded beef. The important thing is the amount of fat content in it. Usually, 15% of fat content is recommended.
Hamburger: 5lbs, 15% fat
Garlic paste: 2 teaspoon
Kosher salt: 3 tablespoon
Granulated onion: 1 tablespoon
Ground black pepper: 3 tablespoon
Paprika: 2 tablespoon
Whole mustard seed: 1 tablespoon
Liquid smoke: 1 tablespoon
Prague powder: 1 teaspoon
If you have whole beef cuts, then grind them in a meat grinder, or place your ground beef into a suitable mixing bowl. Mix all the spices and cure in a small box and add these mixed spices into the beef. Use your hands to mix well the ground beef and the spice mixture and make sure that all the ingredients are thoroughly mixed and evenly distributed.
The next we have to do is placing this summer sausage mixture in a covered bowl for 1-3 days in the refrigerator. Allow it to cure at least overnight, but a long time will work wonders. After it has cured in the refrigerator, then make long logs of about 2 inches in diameter.
