Ingredients
2 tablespoon cubed butter
3 cups water
1 bay leaf
2 large thinly sliced onions
½ teaspoon coarsely ground pepper
2 cans of condensed undiluted beef broth
¾ cup of regular beef broth
¾ cup shredded Swiss or Gruyere cheese
2 fresh thyme sprigs
16 slices of French bread
2 teaspoons of Worcestershire sauce
Directions
- Spread butter in a pan and slow cook.
- Add sweet and red onions to the butter then sprinkle with the ground pepper.
- Cook while covered and on a low heat until the onions are slightly tender.
- Stir in broth, water, Worcestershire sauce and cook covered for about 2 hours until all the flavors are blended well.
- Then remove the bay leaf and the herb sprigs.
- When ready to serve, preheat the broiler, place the bread on a baking sheet and broil until it is lightly toasted for about 2 minutes on both sides.
- Add cheese as topping to the bread and broil until all the cheese is melted.
- Put the soup in a bowl and top it with cheese toast then serve immediately.
