The specialty of this homemade Stovetop Mac and Cheese is that no artificial substances or preservatives are used.

Ingredients

  • Macaroni:
    8 ounces elbow macaroni
It is the main ingredient of this mac and cheese. You are free to use macaroni of any shape you love. Variety of noodles and pasta for example rotini noodles, bowties noodles, spaghetti noodles, chickpea pasta, gluten-free pasta, and whole wheat pasta can also be used.

  • All-purpose flour:
    2 TBS
Commonly all-purpose flour is used but there are some good substitutions for the flour that work well includes all-purpose gluten-free flour, tapioca starch, and corn starch, etc. do not use wheat flour because it will give a wheaty taste.

  • Butter:
    2 TSP butter
Use butter and melt it and there is no good substitute for butter.

  • Milk:
    1 cup whole milk
Prefer milk having higher fat content because it will enhance the creaminess of your mac and cheese. Whole milk, 2% milk, or 1% milk all are good.

  • Sour cream:
    ¼ cup sour cream
Sour cream and Greek yogurt both have the same taste, so you can easily use one of these.

  • Salt and pepper:
    ½ teaspoon
Add salt and pepper according to your taste.

  • Cheese:
    2 cups shredded cheddar cheese
The main thing that matters in this recipe is the quality of the cheese you are using. Use high-quality sharp cheddar cheese for the best taste.

  • Garlic powder:
    ¼ teaspoon garlic powder
We take it as an optional ingredient. If you and your family like its taste then add a pinch of it.

Directions

  • 1st step: Collection and measurement of the ingredients
There are only eight ingredients commonly used in this recipe. The best thing is that all of these ingredients are reasonable and easily available.

Take sea salt, garlic powder, and flour in a bowl and mix them. This recipe is super fast when we start cooking after gathering all the ingredients. So, it is very important to organize and measure all the ingredients before we start.
  • 2nd step: Boil the macaroni
Take water in a pan, put ½ to ¼ teaspoon of salt and then bring it to boil. Add 1 tsp of oil in the boiling water, this step might look insignificant but it prevents macaroni from sticking together. The salt we add during boiling of the macaroni affects the overall taste of this Stovetop Mac and Cheese. When it’s done drain it and set aside.
  • 3rd step: Make the cheese sauce
It’s very easy to make cheese sauce but one has to take care of a few technicalities

    Prepare a Roux:
Roux is a mixture of butter and flour and it is used to enhance the thickness of the sauce. First of all, melt the butter in a pan over medium heat and then put all the dry ingredients i.e. salt, flour, and garlic powder in it. Make a homogeneous mixture and cook it for about 1 minute until the mixture turns slightly brown then move to the next step.

The gradual addition of wet ingredients:
Add 1 cup milk in the prepared roux and whisk well, then pour the Greek yogurt or the sour cream and whip again. Allow this mixture to cook over a medium flame for about 3-5 minutes with continuous whisking until it starts getting thick. If you boil the mixture your mac and cheese will become too thick. So, turn the flame to low when the cheese sauce gets thick enough to stick to a spatula.

Add the cheese and prepare a smooth mixture:
Now keep the flame low and add the shredded cheese in the sauce and mix well to prepare a smooth and creamy mixture for 1-2 minutes until all the cheese is melted. At this stage, you can check the sauce and adjust the salt or garlic powder according to your taste.
  • 4th step: Combine boiled macaroni and prepared sauce:
When your cheese sauce is done, turn off the flame. The next step is the mixing of the silky smooth and creamy cheese sauce and cooked macaroni. Stir well to combine all the ingredients. Your delicious Stovetop mac and cheese is ready. Let it cool for 3-5 minutes so that cheese sauce becomes thick.
  • 5th Step: Serve
Now it’s a time to serve this special homemade stovetop mac and cheese. It can be served as a complete meal or also as a side dish with BBQ, meatloaf, fried chicken, or large salad. Serve warm and enjoy!

  2. Always Use freshly grated cheese: Mostly pre-shredded cheeses at the bakery or stores do not melt smoothly because they have a coating of starch or cellulose on them. So, it is preferred to use the Cheese block and shred it by hand just before using it.

Things to remember:

Reheat:

The best way is that you should enjoy the mac and cheese when it is fresh. But there is an option of reheating either on the stove or in the microwave. Avoid overheating because it will lead to separation of all the ingredients and you will lose the creamy texture and stickiness of the cheese.

Do not overcook the cream:

Avoid boiling the cream for too long because it results in the gradual decrease in the moisture content and ultimately the cheese sauce gets stingy. When it starts boiling, cook it for one minute and you will get the perfect sauce.

Storage:

If you want to store it then use an airtight container and place it in the refrigerator. When you reheat it must add 1-2 tsp of milk to regain its creamy and cheesy consistency. Usually, it is not recommended to freeze and store stovetop Mac and cheese.
